Husband and wife team, Mick & Kate Carroll opened Radius Pizzeria & Pub because they love food, nature and family. Co-owner and Executive Chef Mick Carroll grew up in a tiny, coastal farming village in Ireland working alongside his dad and three brothers on the family dairy farm. At 19, Mick won a scholarship to study Culinary Arts in Gap, France — introducing him to the wider world and instilling his wanderlust and thirst for culinary knowledge and experience.

Mick completed a degree in Culinary Arts at Ireland’s Killibegs Culinary College and went on to work in fast-paced, fine dining restaurants and hotels in Dublin, Cong, Chicago and San Francisco. In 2003, Mick moved out of the kitchen and into the office, managing multi-unit service operations such as The San Francisco Zoo and George Lucas’s Letterman Digital Arts Center.

Co-owner and front of house manager Kate Carroll grew up in Durham and Kinston, NC and graduated from East Carolina University. In 1992, Kate moved to San Francisco where she earned a degree as a certified massage therapist. In 2003, Kate opened earth & sky oasis in Union Square, San Francisco — a massage, acupuncture, skin & nail care wellness retreat. Kate has over 10 years experience in restaurant and bar service in fine dining, family-style, casual boutique and sports-oriented restaurants and bars.

In 2010, the Carrolls moved to Hillsborough after the birth of their twin boys, Ronan and Wyatt, to enjoy the many generations of family living throughout the Triangle, Triad and Charlotte area.

The amazing selection of local produce, proteins, beer, wine and spirits allow Radius to live up to its name because much of the restaurant's ingredients are sourced within a 250 mile radius of Hillsborough. And why pizza from an Irish chef?? Mick discovered “the power of pizza” when he took up mountain biking. At the end of a long ride, he and his cycling friends would stop at the local pizzeria. There, they would rejuvenate, refuel and share stories about the day’s ride. Mick hopes the area’s many road cyclists will come to Radius and do the same!
